Buckwheat is grown in many countries, the history of Soba started in Japan thousands of years ago. Soba noodles as we know them today started in the 16th century. The way Soba is made and seasoned are quite unique to Japan.
Nozawa has a number of delicious Soba restaurants, many that have been going for generations and make a delightful array of Soba dishes. You have probably been to one of them like Daimon Soba, Yoshimi Soba, Soba Suzulki, and also down at Kongou. There are many others restaurants in town that offer soba dishes as part of their menu.
Humble beginnings for Soba Noodles
Yamazaki san down at the Night Market Kongou takes the process all a step further and makes Gluten Free soba noodles. Using a natural plant called Oyama Bokuchi he harvests the stalks and boils them in the natural hot spring water of Ogama the outdoor cooking onsen in the village.
Then drys them out and adds to the Soba Mix which then eliminated the need for Wheat flour and makes the Soba noodles totally gluten free.
